Every spice in this blend is a warming carminative with documented antimicrobial and anti-inflammatory essential oils. Grains of selim and alligator pepper (Aframomum) are studied for anti-inflammatory and blood-pressure effects; calabash and African nutmeg add aromatic, mildly sedative compounds; clove's eugenol is a potent antioxidant and analgesic. Together they aid digestion of heavy, oily West African dishes and bring gentle heat to break a fever or cold — pharmacology delivered as flavor.
Toast the whole spices lightly, then grind fresh for the brightest aroma. Use sparingly — a quarter teaspoon perfumes a whole pot. Add to pepper soup, grilled-meat rubs, and braises; bloom in oil or simmer in broth.
