Why it is ours

Amberjack is a prize of Gulf Coast fishing — the fish charter captains and shore anglers, including Black Gulf fishing communities, bring home to grill for a crowd. Its size makes it a gathering fish.

What it does

Amberjack is a firm, high-protein fish with respectable omega-3s, B12 and selenium and a good shot of potassium — the mineral that counterbalances sodium and supports healthy blood pressure. Its steak-like texture makes it an easy, satisfying swap for red meat, lightening the saturated-fat load of a heavy-meat diet.

How it is cooked

Amberjack's dense fillets hold up to high-heat cooking. Season and grill, blacken in a cast-iron skillet with Creole spice, or broil. It is firm enough to skewer or cube for a fish stew that won't fall apart. Do not overcook — it can dry out once past done.
