Why it is ours

Spanish mackerel is an accessible coastal fish in the Black South — grilled at the cookout, smoked for the week, fried for supper. It offers the smoked-fish tradition of kingfish at a lower mercury cost and a friendlier price.

What it does

Atlantic Spanish mackerel is an oily, omega-3-dense fish — high EPA and DHA with vitamin D, B12, selenium and CoQ10 — but unlike its large king-mackerel cousin it is small and low-mercury, rated a 'best choice' on most advisory lists. That combination makes it one of the smartest fatty fish for regular eating: full heart-and-brain benefit, low mercury risk.

How it is cooked

The rich, dark-streaked flesh grills, broils, and smokes beautifully and is excellent pan-fried. Bleed and ice promptly for best flavor. Acid — lemon, lime, vinegar — and bold seasoning balance its oily richness. Smoking turns it into a keeping fish and a dip base.
