Barracuda (West African Coastal — Eja Eja)

Barracuda is a predator fish, and the people who fished it were predator-class fishermen. Fante men who went beyond the continental shelf in open canoes to catch barracuda were doing something that most cultures today would require a motorboat and GPS for. The fish they brought back fed whole beach communities.

Why it is ours

Most accessible in coastal US cities with access to fresh seafood markets. Florida, in particular, has barracuda available fresh. For Black American families in coastal states, this is an opportunity to eat a fish that their coastal West African ancestors specifically valued. Less accessible inland — frozen barracuda is rare in the US market.

What it does

Barracuda is an exceptionally lean white fish with moderate omega-3 content — making it ideal for high-protein, low-fat approaches to metabolic syndrome management. The niacin content (8.5mg B3 per 100g, 53% DV) is clinically relevant — niacin is the most effective supplement for raising HDL (good cholesterol), and barracuda provides food-source niacin that avoids the flushing side effects of supplemental niacin. Potassium (430mg per 100g) supports the DASH diet principle of high potassium-to-sodium ratio for blood pressure management. The selenium-B12 combination provides simultaneous thyroid and neurological support.

How it is cooked

Available fresh at some coastal seafood markets (Florida, Georgia, New York, Texas). The fish market ecosystem in major port cities often has barracuda seasonally. Filet and remove the dark lateral muscle line before cooking — this band is stronger flavored and can be off-putting. Grill, bake, or pan-sear over high heat. The firm flesh holds up to assertive West African spice rubs (scotch bonnet, garlic, ginger, palm oil). The skin crisps beautifully when pan-seared.
