Roasted Breadfruit

Whole breadfruit roasted directly over open flame or gas burner until exterior is charred and interior is tender and fluffy. The roasting concentrates flavors, slightly caramelizes the interior starches, and creates a dramatically different eating experience than boiled breadfruit. Higher potassium, Vitamin C, and omega-3 (unusual for a starch) than most root vegetables.

Why it is ours

A Sunday tradition in Jamaican, Barbadian, and Trinidadian households. Available fresh at Caribbean grocery stores in US cities with Caribbean populations. Fresh breadfruit increasingly available at some farmers markets in Florida and Hawaii.

What it does

The omega-3 content of breadfruit (0.06g ALA per 100g) is unusual for a starchy food — most starches contain no meaningful omega-3. Combined with the high potassium and Vitamin C, roasted breadfruit delivers a cardiovascular nutrient profile that most starches cannot match. The resistant starch is partially broken down by roasting but remains significant in semi-ripe roasted breadfruit. The Maillard compounds formed in fire-roasting may add additional antioxidant capacity beyond the raw food profile. For the APEX population with the highest cardiovascular mortality rate of any demographic, a starchy food that simultaneously delivers potassium, Vitamin C, and omega-3 represents genuine clinical value.

How it is cooked

Place whole breadfruit (not cut, not peeled) directly on a gas burner over medium-high flame or on a grill rack over charcoal. Rotate every 5 minutes for 25-35 minutes total until the entire exterior is blackened and a skewer inserted into the center meets no resistance. Let rest 5-10 minutes. Cut in half — scoop out the fluffy, smoky interior, avoiding the core. Season with butter, salt, or olive oil. The charred exterior is discarded. Available fresh at Caribbean grocery stores; canned breadfruit available online and at specialty stores.
