What it does

Buckwheat shoots are an unusually rich source of rutin, a flavonoid that strengthens capillaries and supports healthy circulation and blood pressure. Buckwheat is a pseudocereal, so it is naturally gluten-free and carries a complete-ish plant protein. Sprouting raises vitamin C and reduces antinutrients. Soft and mild, it eats like a tender lettuce — a gentle, substantial salad green from the windowsill.

How it is cooked

Grow from UNHULLED (black-shelled) buckwheat — hulled groats won't sprout into shoots. Soak, sow on a soil tray, cover briefly, then green up; harvest at 8-12 days and remove any clinging black hulls. Eat raw as a lettuce substitute in salads, wraps, and sandwiches.
