Why it is ours

Calico Crowders survived because they were beautiful as well as useful — and because Black gardeners selected and traded the prettiest, hardiest seed each season. That informal seed-saving network was its own grassroots agricultural institution.

What it does

The mottled seed coat carries anthocyanins and proanthocyanidins — the same pigment-bound antioxidants found in berries — that scavenge free radicals and support vascular health. As a low-glycemic, high-fiber pulse, the Calico Crowder steadies blood sugar and lowers cholesterol. Folate and magnesium content support cardiovascular and nervous-system health under chronic stress load.

How it is cooked

Rinse and sort. Simmer 50-70 minutes until tender. Crowder peas yield an especially dark, savory broth — keep it as the dish's soul. A whole onion and a smoked bone do most of the seasoning work.
