Chicken Feet

Chicken feet are nearly pure collagen and skin — a few grams of muscle and bone, but the value is in the connective tissue. When simmered for several hours, they release glycine, proline, hydroxyproline, gelatin, and minerals (calcium, magnesium, phosphorus from the small bones) into the broth. A standard chicken-feet broth is among the most collagen-dense foods you can prepare at home — and at a cost of pennies per cup.

Why it is ours

Available at every Black-serving grocery, Asian market, and Latin market. Among the cheapest meat-case items — often $2-3 per pound. The most affordable serious collagen source available.

What it does

Chicken foot broth is arguably the most cost-effective joint-and-skin medicine available — a few dollars of chicken feet yields a gallon of collagen-rich broth that supports cartilage maintenance, gut barrier integrity, and skin elasticity. For Black Americans facing high rates of osteoarthritis (especially in women), high postpartum recovery demands, and skin conditions complicated by inflammation (PIH, eczema, keloid susceptibility), chicken feet broth is a precision intervention with deep cultural resonance. The glycine content is particularly relevant — glycine is the rate-limiting amino acid in collagen synthesis, in glutathione production (the master antioxidant), and supports sleep quality. The chicken-feet broth your grandmother made was a joint-skin-sleep prescription delivered through tradition.

How it is cooked

Buy fresh or frozen chicken feet (Black-serving and Asian markets). Trim toenails with kitchen shears. Blanch 5 minutes in boiling water, drain, rinse. Simmer with onion, garlic, ginger, bay leaf, peppercorns 4-6 hours (or pressure-cooker 90 minutes). Strain. The resulting broth gels when chilled — that's the collagen working. Drink as a daily cup or use as base for soups.
