Why it is ours

Dry chickpeas are pantry-cheap and shelf-stable; sprouting turns them into a fresh, protein-rich green-grocery substitute with no store trip.

What it does

Sprouting chickpeas raises their vitamin C and folate, lowers phytates and oligosaccharides (the gas-causing sugars), and increases protein digestibility. The result is a more absorbable iron and a gentler bean. Sprouted chickpeas blended into raw hummus deliver living enzymes and a lower glycemic load than canned.

How it is cooked

Soak dry chickpeas overnight, drain, then rinse and drain twice daily for 2-4 days until short tails form. Eat raw only when tails are short and the chickpea is tender; otherwise steam 5-10 minutes. Blend sprouted chickpeas into raw hummus with tahini, lemon, and garlic, or roast for a crunchy snack.
