Why it is ours

Comeback sauce is Mississippi's signature — it shows up at fish fries, on burgers, as salad dressing, and as the dip that makes a plate of saltines disappear. It is a Delta culinary fingerprint shared across Black and white Mississippi tables.

What it does

Comeback sauce is mostly mayonnaise, so its profile is fat and sodium — the chili sauce and ketchup base add sugar too. The garlic, paprika, and hot sauce carry real flavor compounds, but nutritionally this is a richness-and-salt condiment to use with a light hand. The rehab move matters here: built on a Greek-yogurt or avocado-oil-mayo base, comeback sauce keeps every bit of its tang and garlic-pepper kick while shedding much of the sodium and trading seed-oil fat for better fat. A drizzle, not a pour.

How it is cooked

Whisk together mayonnaise, chili sauce or ketchup, a little mustard, Worcestershire, hot sauce, grated garlic and onion, paprika, and black pepper. Let it rest in the refrigerator several hours so the flavors marry. Thin with a splash of oil or water to dressing consistency if desired.
