Why it is ours

Country fried steak is the Sunday dinner in Southern Black households that do not have the budget for ribeye or T-bone. The knowledge required — double dredging, maintaining skillet temperature, building a gravy from drippings — is real cooking skill. The dish transforms the cheapest cut of beef into something that carries dignity and satisfaction at the table.

What it does

Cube steak is typically cut from the round — a lean, tough cut transformed by mechanical tenderizing. 3oz delivers 23g protein, 2.5mg heme iron, and 5mg zinc. Heme iron bioavailability directly addresses iron deficiency anemia. Zinc supports immune function and testosterone. The white gravy adds fat and flour but the beef itself is nutritionally solid.

How it is cooked

Season cube steak with garlic powder, onion powder, black pepper, and salt. Dredge in seasoned flour, dip in egg wash, dredge again. Fry in a cast iron skillet in avocado oil or lard at medium-high heat, 3-4 minutes per side. Remove and make white gravy in the same pan with the drippings, flour, milk, salt, and black pepper. Pour gravy over the steak and serve with mashed potatoes or white rice.
