Small, yellow-tinted grain with a rich, nutty, slightly sweet flavor. Higher in protein (14%), lutein (the eye-protective carotenoid — 4x more lutein than modern wheat), riboflavin (B2), iron, zinc, and magnesium than modern wheat. Lower in gluten quantity but different gluten structure — some wheat-sensitive individuals (non-celiac) report better tolerance. Very high antioxidant content from the unreduced bran layer.

The lutein content at 4x modern wheat is einkorn's most clinically significant attribute for the APEX population with higher AMD rates. Lutein concentrates in the macula — daily einkorn bread, pasta, or porridge contributes meaningfully to lutein accumulation in the retina over time. A 2006 Italian study found einkorn bread caused a significantly lower glycemic response than modern wheat bread despite similar fiber content — attributed to the different protein-starch matrix structure of the unhybridized grain. Some (not all) individuals with non-celiac wheat sensitivity report better tolerance for einkorn — hypothesized to be due to the different gluten protein ratio (higher gliadin-to-glutenin ratio and simpler protein structure). Note: einkorn is NOT safe for celiac disease.
Einkorn berries: soak overnight, simmer 30-40 min. Use as grain bowl base or in salads. Einkorn flour: available online (Jovial Foods is the primary US brand). Substitute at 75-85% of the volume called for in recipes (absorbs liquid differently from modern flour). Makes exceptional pasta, pancakes, and flatbread.
