Fish and grits is a Black Southern institution, and on the Florida coast it is built from local catch. Dockside and neighborhood fish houses across Black Florida serve it as the everyday morning anchor — affordable, local, and deeply familiar.

What it does

Fish and grits delivers complete protein and omega-3s alongside the slow-burning complex carbohydrate of whole corn grits. It is a genuinely balanced breakfast when the fish is fresh and the grits are stone-ground rather than instant. For a community facing high heart disease rates, a morning plate built on fish instead of pork and processed meat is a quiet act of repair.

How it is cooked

Lightly dredge fresh fish in seasoned cornmeal and pan-fry; serve over stone-ground grits cooked slow. Modernize by grilling or blackening the fish and cooking the grits in low-sodium broth with a little olive oil instead of butter and cream. Finish with hot sauce, lemon, and fresh herbs.
