Mini-season in Florida — the last Wednesday and Thursday of July — is when Black South Florida families get in the water with dive masks and tickle sticks and come up with coolers full of bugs. That is what you call spiny lobster in Florida: bugs. And if you know how to find them under the ledges in six feet of water, you don't need a commercial license and you don't need a boat. You need to know where to look.

Why it is ours

Mini-season is a South Florida cultural event — Black divers, Haitian-American families, Caribbean-descended Black American communities all participate in the two-day recreational harvest. It is one of the few moments when premium seafood is accessible to working-class families through skill and knowledge rather than economic power.

What it does

Florida spiny lobster delivers a combined zinc-selenium-B12 profile that supports immune T-cell proliferation, neurological methylation, and antioxidant enzyme activation simultaneously — a rare functional triad in a single protein source. The phosphorus content (220mg per 3oz) partners with calcium for bone matrix formation — critical for Black women over 50 whose osteoporosis risk is underdiagnosed due to the clinical myth that Black women have inherently stronger bones. Vitamin B12 at 3.0mcg exceeds the daily requirement in a single serving — protecting against the methylation deficits and elevated homocysteine levels that increase stroke risk in hypertensive Black adults. The cholesterol (76mg per 3oz) does not adversely affect cardiovascular outcomes in the context of a low saturated fat dietary pattern.

How it is cooked

Split the tail lengthwise and grill cut-side down over medium-high heat for 5-6 minutes until flesh turns white and opaque. Brush with garlic-herb oil rather than heavy butter. Alternatively, boil tail in seasoned water for 8-10 minutes. The meat separates easily from the shell when cooked. Do not overcook — the meat becomes rubbery.
