Sheepshead (Freshwater)

The Mississippi River sheepshead is not the same fish as the saltwater sheepshead — but it carries the same reputation. Overlooked, undervalued, and at the table better than what people paid twice the price for. Every Black fisherman who ever put a cane pole in the Mississippi knew this fish. It's the river's fish. It belongs to everybody who's ever sat on that levee.

Why it is ours

Freshwater drum is caught throughout the Mississippi River watershed — Arkansas, Mississippi, Louisiana, Missouri, Tennessee — giving inland Black communities access to a significant fish protein without access to Gulf Coast coastal fisheries. It democratizes seafood nutrition geographically.

What it does

Freshwater drum's potassium content (330mg per 3oz) supports the same renal sodium excretion mechanism as Gulf species, contributing to blood pressure reduction through the tubular transport pathway. Iron content as heme iron addresses the iron deficiency burden in Black women in Mississippi, Louisiana, and Arkansas — states where both the highest rates of hypertension and highest rates of anemia in Black women converge. The selenium content activates the thioredoxin reductase system — an antioxidant pathway independent of glutathione that provides cellular protection against lipid peroxidation in cardiovascular tissue. Omega-3 fatty acids, while modest compared to marine fish, provide cumulative anti-inflammatory benefit when consumed at 2-3 servings per week over months — the timeline for measurable arterial flexibility improvement.

How it is cooked

Freshwater drum has firmer flesh than most freshwater fish — excellent for frying, baking, and grilling. The skin has a strong odor that can be reduced by removing it before cooking. Fillet, remove skin, and soak in salted water or milk for 30 minutes before cooking to mellow the flavor. Pan-fry with cornmeal crust. Bake with garlic, onion, and tomatoes at 375F for 25 minutes.
