Why it is ours

Black Americans with 'lactose intolerance' that continues even with lactase pills may actually have A1 casein sensitivity (different mechanism). Goat milk yogurt often resolves the issue completely. The cultural assumption that Black Americans can't eat dairy is not biological destiny — it's a cow-milk problem, not a dairy problem.

What it does

A2 casein does not trigger BCM-7 (beta-casomorphin-7) release — the inflammatory peptide released from A1 cow milk that drives mucus production, gut inflammation, and neurological symptoms in sensitive individuals. Medium-chain triglycerides (MCTs) from caprylic and capric acid provide direct brain fuel. Live cultures in yogurt form provide Lactobacillus bulgaricus and Streptococcus thermophilus — relevant for gut microbiome diversity.

How it is cooked

Eat plain or with berries, honey, hemp seeds. Use as a base for smoothies (replaces protein powder). Use as a substitute for sour cream in all applications. Works identically to cow yogurt in cooking. Goat milk yogurt often tangier — a culture shift for those accustomed to sweet commercial yogurt.
