Why it is ours

Crab rice is the thrift and the dignity of Gullah cooking — nothing wasted, everything seasoned. On the islands, crabs were caught with a chicken neck on a string off the dock, and a few crabs fed a table because the rice carried them. It is the daily, unfancy cousin of the celebrated red rice.

What it does

Blue crab is a lean, zinc- and selenium-rich protein with vitamin B12 and omega-3s — selenium supports thyroid function and B12 addresses a deficiency common in this community. Built on rice, crab rice is a complete, affordable meal that stretches a small amount of seafood across a whole family without losing nutrition.

How it is cooked

Make a stock from crab bodies and shells, sweat onion and a little tomato in the fat from rendered bacon or smoked meat, stir in rice, add the crab stock, and cook covered until the rice is tender and dry. Fold in picked crab meat at the very end so it stays sweet and whole.
