Why it is ours

Hoecakes are being reclaimed by Black food historians as a foundational food in the Black American culinary canon. The name itself preserves the material history — the hoe as both tool and cooking surface.

What it does

When made with stone-ground cornmeal, hoecakes carry the same nutritional profile as cast-iron cornbread. Naturally gluten-free in pure cornmeal form.

How it is cooked

Basic: 1 cup stone-ground cornmeal, 1/2 tsp salt, 3/4 cup water or buttermilk. Mix to a thick pourable batter. Cook on a cast-iron skillet over medium-high with a small amount of oil. 3–4 min each side.
