Red peas soup is Jamaica's classic Saturday soup — the weekend pot that fills the house with the smell of thyme, allspice, and coconut. It carries the same bean-pot economy as the Southern table, dressed in island aromatics, and is a fixture in Jamaican American kitchens across the East Coast.

What it does

Red kidney beans bring high soluble fiber, folate, iron, and a low glycemic index that supports cholesterol and blood-sugar control. The calabaza pumpkin melts into the broth to thicken it and adds substantial beta-carotene for immunity and eye health. A modest amount of coconut milk supplies medium-chain fats and richness, though it raises the saturated-fat content, so a light hand keeps the dish heart-friendly. Mashing some beans builds creaminess without extra fat. Greens or thyme add nitrate and antioxidants.

How it is cooked

Simmer dried red kidney beans (soaked) until starting to soften, then add coconut milk, calabaza pumpkin, scallion, thyme, garlic, pimento (allspice), and a whole scotch bonnet for aroma. Drop in spinners (small hand-rolled flour dumplings) and yam or coco. Simmer until the pumpkin dissolves and the beans are tender and the broth thickens. Remove the scotch bonnet before it bursts.
