Why it is ours

Jerk chicken is the most recognized Jamaican food in American culture — from backyard cookouts to stadium events. But its Maroon origin story — freedom food born in the mountains — is rarely told alongside it. Understanding jerk as resistance food changes the meaning of every cookout.

What it does

Jerk seasoning is the most pharmacologically dense spice blend in the Caribbean tradition. Each component has independent clinical evidence: allspice eugenol inhibits COX enzymes (anti-inflammatory mechanism identical to aspirin); scotch bonnet capsaicin activates TRPV1 receptors (pain reduction); thymol is the active compound in Listerine (antimicrobial at dental clinically studied doses); garlic allicin has been confirmed in 39 meta-analyses to reduce LDL cholesterol and blood pressure; ginger shogaols reduce TNF-alpha and IL-6 in clinical models. Combined in one marinade, this is the most complex ancestral anti-inflammatory preparation in Black American cooking.

How it is cooked

Blend: 6-8 scotch bonnet peppers, 2 tbsp allspice berries (ground), 1 tbsp fresh thyme (or 1.5 tsp dried), 4 cloves garlic, 1-inch fresh ginger, 1 tbsp brown sugar, 2 tbsp soy sauce, 1 tbsp lime juice, 1 tbsp olive oil, 1/2 onion, green onions. Blend to paste. Marinate meat 4-24 hours. Grill or smoke over pimento wood for authentic flavor.
