What it does

Kodo millet is among the highest-fiber cereal grains, supporting satiety, weight control, and gut health. The magnesium supports blood pressure regulation.

How it is cooked

Rinse well and soak 1-2 hours, then simmer 1 cup millet in 2.5-3 cups water for 25 minutes. Soaking improves digestibility and texture. Excellent as a pilaf, porridge, or rice replacement.
