What it does

The fermentation of the grain base produces L. plantarum populations that reach 10^7 to 10^8 CFU per mL in traditional kunun zaki — comparable to commercial probiotic supplements. The spice matrix provides specific anti-inflammatory mechanisms: ginger's 6-gingerol inhibits prostaglandin synthesis by the same pathway as ibuprofen; cinnamon cinnamaldehyde activates GLUT4 transporters in muscle cells, improving insulin-independent glucose uptake. How it is cooked

Traditional method: soak millet or sorghum 24 hours, grind wet, mix with ginger (fresh, grated), cloves, cinnamon, sweet potato (for natural sweetness). A simplified version uses cooked millet porridge, cooled, blended with fresh ginger and spices, fermented with a spoon of yogurt as starter culture for 24 hours.
