Malanga Yautía Blanca

What it does

Malanga starch granules are unusually small, which makes the cooked root remarkably easy to digest and a classic first food and convalescent food. It has a lower glycemic index than potato and ferments well in the colon. As a low-allergen root it is a safe staple for those with sensitivities to grains and other tubers.

How it is cooked

Peel under running water (the raw root is slimy and the sap can irritate skin), then boil until tender and mash, or add to sancocho and provision stews. Always cook fully.
