Why it is ours

Meatloaf was a weeknight workhorse in Black households for generations — affordable, filling, and reliable. The leftover meatloaf sandwich the next day (cold, on white bread) is its own tradition. This dish appears in no restaurant canon, yet it fed more Black families than any menu item.

What it does

Ground beef meatloaf is a high-bioavailability iron and zinc source — critical nutrients for Black women who are disproportionately iron-deficient. The egg and bread crumb binder holds moisture and adds B vitamins. The glaze adds sugar; monitoring portion keeps glycemic impact manageable.

How it is cooked

Mix by hand, not over-mixed — overworking makes it dense. The ketchup-brown sugar glaze caramelizes in the last 15 minutes; apply it in two coats. A loaf pan is traditional; free-form on a sheet pan gives a better crust-to-interior ratio.
