Why it is ours

The mustard green is core Southern Black food; the microgreen lets you grow its flavor and nutrition fresh on a windowsill, year-round, when fresh greens are scarce or costly.

What it does

Mustard microgreens carry the brassica glucosinolates that convert to detoxifying, cancer-defense isothiocyanates, concentrated 4-40x over the mature green. They deliver the vitamin K and calcium of the grown mustard pot in raw, enzyme-active form, with vitamin C to support iron absorption. A way to get the soul-food green's nutrition without the long cook and pork fat.

How it is cooked

Grow from mustard seed on a soil tray or mat; harvest at 7-12 days. Eat raw to preserve the enzyme that forms the active compounds. Their heat shines as a finishing green on fish, beans, cornbread, and rich braises. Snip, rinse, dry, and scatter.
