Available at West African grocery stores, African health food stores, and increasingly at mainstream natural food stores (Bob's Red Mill carries a plantain flour; specialty brands like Green Banana Foods available on Amazon). Black American people already engaged in gluten-free or diabetic-conscious eating will find plantain flour a culturally grounded alternative to commercial substitutes.

What it does

Plantain flour has one of the highest resistant starch concentrations of any commercially available flour — 15-20% resistant starch by dry weight, compared to 1-4% in regular wheat or rice flour. A 2021 study in Food Chemistry found that plantain flour supplementation at 20g daily over 8 weeks significantly improved insulin sensitivity and reduced fasting glucose in adults with prediabetes. The resistant starch profile is dominated by RS2 (raw starch granules) which is highly resistant to digestive enzymes and reaches the colon intact, feeding Bifidobacterium and Bacteroides species that produce butyrate. Plantain flour also contains dopamine precursors in meaningful concentrations — relevant for the dopaminergic depletion associated with chronic stress in the Weathering Hypothesis context.

How it is cooked

For porridge: whisk 3-4 tablespoons into cold water first to prevent lumping, then add to hot water or broth while stirring continuously. Cook 5-7 minutes on medium heat until thickened. For baking: substitute up to 30-40% of wheat flour with plantain flour in breads, muffins, pancakes — gives denser texture and higher fiber. As a swallow food: prepare like amala — boiling water, stir in flour, cook until smooth and elastic.
