Why it is ours

Porgy is the fish of Black communities from Harlem to Baltimore to Philadelphia. Fish shops in these neighborhoods built their entire business on porgy and whiting. It is a neighborhood fish — cheap enough for daily eating, flavorful enough to be worth it, simple enough to fry at home with one pan.

What it does

Porgy is a lean, complete protein with a mild omega-3 profile. Low mercury makes it safe for regular consumption. Selenium content supports thyroid and antioxidant function. Similar nutritional profile to whiting but with slightly more fat and flavor.

How it is cooked

Score the skin on both sides before frying so the fish cooks evenly and the skin crisps up. Season flour or cornmeal with garlic powder, onion powder, cayenne, and salt. Fry whole in fresh oil at 350°F for 5-6 minutes per side. The head and tail are edible and traditional — pick the cheek meat near the head.
