Bringing the potato salad means you're trusted. Not making it the way the matriarch makes it is a family dispute waiting to happen. The debate between mustard-forward and mayo-forward versions has ended friendships and started them.

What it does

Cooled potatoes develop resistant starch — a prebiotic fiber that feeds gut bacteria and moderates blood sugar response. Potassium from the potato base is directly beneficial for blood pressure regulation. The mayo and egg base add saturated fat; the net nutrition depends heavily on the dressing ratio.

How it is cooked

Waxy potatoes (red or Yukon gold) hold their shape better than russets. Boil until just tender, cool completely before mixing — this is when resistant starch forms. Classic additions include hard-boiled eggs, celery, onion, sweet relish, mustard, and mayonnaise.
