What it does

Acetic acid slows the rate of gastric emptying — reducing post-meal blood glucose spikes by up to 20% in research studies. The acidification of leafy greens during cooking (the grandmother's vinegar in the collards) increases iron absorption by converting non-heme iron to a more bioavailable form. The probiotic mother feeds beneficial gut bacteria. One tablespoon in water before a high-carbohydrate meal is the documented blood glucose protocol.

How it is cooked

1 tablespoon in 8oz water before meals containing significant carbohydrates — the research protocol. Always dilute — undiluted vinegar damages tooth enamel. Add to collard greens while cooking.
