Why it is ours

West African coastal fishing culture has included sea urchin consumption for centuries. It now commands luxury prices in Japanese and European markets — another example of ancestral food knowledge becoming a commodity.

What it does

Sea urchin roe contains the most concentrated omega-3 and vitamin A of any seafood per gram. Iodine supports thyroid function. The eicosanoid precursors in sea urchin have potent anti-inflammatory activity. Used in traditional coastal medicine for joint disease and inflammation.

How it is cooked

Available fresh at Japanese restaurants and high-end seafood markets (expensive). Canned sea urchin available at Asian grocery stores. Eat fresh with light soy and wasabi, or serve on rice. Very small amounts — powerful flavor.
