Why it is ours

Seitan is the single most important ingredient in vegan soul food rehabilitation — it is how Black plant-based cooks recreate fried chicken, smothered 'pork chops,' and barbecue ribs with the bite people expect.

What it does

Seitan is the protein-densest plant option by far, rivaling animal meat gram for gram, and it is low in fat and carbohydrate — strong for muscle maintenance and weight management. But it is an INCOMPLETE protein: wheat gluten is low in lysine, so it should be eaten alongside legumes (beans, lentils) to complete the amino acid profile — the same rice-and-beans completeness wisdom the ancestors lived by, now applied to mock meat. Choosing seitan over fried chicken or pork ribs removes the saturated fat and cholesterol that drive Black cardiovascular disease. Iron is non-heme, so pair with a vitamin-C source (tomato, pepper, citrus) to boost absorption.

How it is cooked

Make from vital wheat gluten plus broth and seasonings: knead, simmer or steam, then fry, grill, or braise. Steaming yields a firmer, more sliceable loaf; simmering gives a softer chew. Season the dough aggressively — gluten is bland on its own. Dredge and pan-fry for vegan fried 'chicken.'
