What it does

Shishitos are mostly mild, so their value is as a low-calorie, nutrient-dense vegetable rather than a capsaicin bomb. They deliver vitamin C, carotenoids, and protective plant pigments that support immune and vascular health, with the occasional hot pod providing a small capsaicin dose. Blistered whole with minimal oil, they make an easy vegetable habit that crowds out less healthy snacks.

How it is cooked

Blister whole in a hot dry or lightly oiled pan until charred and soft, then finish with a pinch of salt and a squeeze of lemon. Eat the whole pod except the stem. Quick and forgiving.
