Why it is ours

One of the three peppers that define Nigerian cooking in the diaspora. Found in every Nigerian-American kitchen and African grocery, it is part of the living continental cuisine now woven into Black American food life.

What it does

Shombo carries cayenne-class capsaicin with a manageable heat that makes daily use easy. Capsaicin supports vasodilation, metabolic rate, and reduced inflammation; the high vitamin C and carotenoid load protects the vascular endothelium. Blended with tomatoes and onions into Nigerian stew base, it delivers a daily dose of pepper-derived antioxidants that counter oxidative stress.

How it is cooked

Blend raw with tatashe (red bell), rodo (habanero), tomatoes, and onion into the classic Nigerian stew base, then fry the blend in oil until reduced. The long shape and thin walls make it easy to blend smooth.
