Why it is ours

Gulf Coast Black communities from Louisiana to the Florida Panhandle have fished speckled trout as a primary protein source for generations. Post-Katrina, many Black fishing communities lost access to their traditional grounds. The fish remains central to the Creole and Black Southern food identity of the Mississippi Gulf Coast.

What it does

Speckled sea trout delivers a potent DHA-to-EPA ratio clinically validated for reducing platelet aggregation and lowering systolic blood pressure by 4-6 mmHg in intervention trials. Selenium content activates glutathione peroxidase — the body's primary antioxidant enzyme — at levels that reduce oxidative stress relevant to Weathering Hypothesis acceleration in Black Americans. Vitamin B12 supports myelin sheath integrity and is frequently deficient in Black adults who rely on plant-forward diets without supplementation. The lean protein profile (22g per serving, less than 2g fat) makes it ideal for managing insulin resistance without the saturated fat burden of red meat. Low mercury classification (FDA Category: Best Choices) makes it safe for pregnant women and children.

How it is cooked

Fillet and pan-fry in a cast iron skillet with a light cornmeal crust and minimal oil — avocado oil or red palm oil. Whole fish can be baked over sliced onions, tomatoes, and peppers at 400F for 20-25 minutes. The flesh is delicate — overcooking makes it watery. Season with lemon, cayenne, garlic, and thyme rather than salt-heavy seasoning blends.
