Why it is ours

Increasingly adopted in health-conscious Black households as the fast-prep greens option. Carries the same nutritional and cultural DNA as collard greens without the 90-minute simmer. A bridge food for younger Black American cooks pressed for time.

What it does

Iron content is critical for Black women of reproductive age who show higher rates of iron-deficiency anemia. Folate is essential for fetal neural tube development. Vitamin K supports bone health for post-menopausal Black women. Pair with vitamin C source to maximize non-heme iron absorption.

How it is cooked

Saute garlic and onion in olive oil or smoked turkey fat. Add cleaned spinach in batches, wilting each addition before adding more. Season with salt, pepper, and a splash of apple cider vinegar or hot sauce. Total cook time 8-12 minutes — much faster than collards.
