Why it is ours

Stuffed bell peppers appeared on Black family dinner tables from the 1950s onward as a way to stretch a pound of ground beef into individual, self-contained servings. Each pepper is its own portion. The dish is tidy, filling, and reproducible — exactly what weeknight dinner required.

What it does

Green bell peppers deliver more vitamin C per serving than oranges — a single pepper provides over 100% DV. The vitamin C co-located with the ground beef's heme iron creates optimal iron absorption conditions. The tomato sauce topping adds lycopene. This is a nutritionally sound weeknight dish wearing humble weeknight clothes.

How it is cooked

Partially cook the peppers first — either blanch for 3-4 minutes or microwave for 2-3 minutes — so they are tender after baking, not crunchy. Season the beef and rice filling aggressively. Top generously with tomato sauce. Bake covered at 350°F for 35 minutes, uncover for the last 10 to let the sauce caramelize slightly.
