Why it is ours

Suya is West African street food at its most iconic — the smell of yaji over open coals is a memory carried across the diaspora. The spice blend is the soul of it.

What it does

Yaji is a functional spice blend, not just heat. Its ground peanut base brings protein, niacin, and resveratrol; cayenne and dried chili deliver capsaicin, shown to modestly boost metabolism and support circulation; ginger and its gingerols add anti-inflammatory and digestive action; cloves, African nutmeg, and other warming spices contribute antioxidant polyphenols. Used as a dry rub rather than a sauce, yaji adds deep flavor and these bioactive compounds without the sodium and sugar load of bottled condiments — making well-seasoned grilled lean meat a culturally rich, blood-pressure-friendlier choice.

How it is cooked

Combine ground roasted peanuts (kuli-kuli powder), cayenne, ground ginger, garlic and onion powder, paprika, bouillon (optional), and warming spices. Rub onto thin beef strips before and after grilling. Adjust salt down to manage sodium.
