Why it is ours

Grilled, yogurt-marinated tandoori-style chicken is an easy, lean weeknight win that has crossed onto health-minded Black tables — a way to eat flavorful protein without the fry pan, using one jar of spice.

What it does

Tandoori masala's spice list is anti-inflammatory and digestive — ginger gingerols, garlic allicin, cumin and coriander aromatics, paprika carotenoids. Its real health edge is the cooking method it's built for: yogurt-marinated, high-heat-roasted lean protein with no breading and little oil. The yogurt marinade also tenderizes and adds probiotics and calcium. A leaner template than frying, with a spice rub that does the flavor work.

How it is cooked

Mix 1-2 tablespoons into plain yogurt with lemon and garlic, coat chicken or fish, marinate several hours, then roast or grill hot. The yogurt's acidity and the spice penetrate the meat. Char lightly for the tandoor effect without burning.
