For families managing diabetes on a tight budget, tepary beans are a powerful, inexpensive tool — high protein, very low glycemic impact, and shelf-stable for years. They turn the cheapest aisle in the store into diabetes medicine.

What it does

Tepary beans are notable for a very slow, gentle effect on blood sugar — their soluble fiber and slowly digested starch produce a low glycemic response, making them one of the best beans for type 2 diabetes management, a disease that devastates Black communities. They are also among the most protein-dense beans, stretching budget-tier protein further per dollar, and carry the standard bean folate, iron, and potassium.

How it is cooked

Tepary beans are dense and need a long soak (8-12 hours or overnight) and a slow simmer of 1.5-2.5 hours; a pressure cooker shortens this dramatically. They hold their shape and have a sweet, nutty flavor that needs little seasoning.
