White Bread

Why it is ours

White bread is so embedded in Black American food culture that its presence is invisible — it is the default, the assumed, the thing that is always already there. The fish sandwich on white bread is a cultural artifact. The banana pudding layers are load-bearing. APEX does not attempt to erase white bread from the Black American table — it contextualizes frequency and proposes gradual substitution.

What it does

Enrichment replaces a fraction of nutrients stripped in processing. Glycemic index of 71-75 — equivalent to pure glucose in speed of blood sugar elevation. No meaningful fiber. No phytonutrients.
