Wild rice — the North American aquatic grass grain with the highest protein content of any 'rice.' Indigenous to the Great Lakes, used in Black American cooking, and one of the most complete grain proteins available.
Wild rice is increasingly available at mainstream grocery stores and represents a premium-positioned whole grain that Black American communities can access for blood sugar and protein benefit.
Wild rice contains twice the protein of brown rice and 4x the protein of white rice per cooked weight. Its glycemic index is approximately 45-57 — significantly lower than white rice (GI 72). The dark pigment in wild rice provides antioxidant flavonoids similar to those in other dark-colored whole grains. Zinc content (1.3mg/100g) contributes to immune function — relevant for Black American communities with zinc deficiency from low red meat and legume consumption. Wild rice's complete grain profile makes it the most nutritionally superior grain for replacing white rice in Black American diets.
Rinse well. Use 3 cups water per 1 cup wild rice. Simmer 45-60 min until grains begin to open/burst. Do not overcook — wild rice should have slight chewiness. Combine with brown rice (1:1) to moderate the strong flavor. Excellent in grain bowls, soups, and as a side dish.
