Yassa

Yassa is Senegal's most internationally celebrated dish — chicken or fish marinated in a sharp lemon juice, mustard, and raw onion mixture for hours, then grilled over charcoal and braised back into a thick caramelized onion sauce. The marinade denatures protein for tenderness and delivers polyphenols from lemon rind deep into the meat fibers. The long caramelization of the onion creates a complexity that is the signature of Diola cooking.

Why it is ours

Yassa is one of the most accessible entry points for Black American communities into Senegambian cooking. The lemon-onion-mustard marinade and the grilling technique are immediately familiar; the dish reads as elevated grilled chicken with a French-Senegalese sauce.

What it does

The lemon marinade delivers limonene — a monoterpene from citrus rind that induces apoptosis in several cancer cell lines (particularly breast and colon) via upregulation of Bcl-2 inhibitory proteins. Extended marination (4-8 hours as traditional preparation requires) allows limonene to penetrate protein fibers. Quercetin from the massive quantities of slowly caramelized onions (often 1 kg of onions per chicken) is the most studied flavonoid for hypertension management — quercetin inhibits ACE activity and reduces systolic blood pressure by 3-7 mmHg in hypertensive patients (Dowers et al., 2015). Mustard in the marinade contributes sinigrin — an isothiocyanate precursor that activates phase II detoxification enzymes in the liver, supporting clearance of endocrine disruptors associated with fibroid development.

How it is cooked

Marinate chicken (with skin) in lemon juice, mustard, garlic, onion, scotch bonnet, and seasoning for minimum 4 hours — overnight preferred. Grill until charred. In a large pot, slowly caramelize sliced onions in oil 30-40 minutes until deeply golden. Add grilled chicken, marinade liquid, olives, and broth. Braise covered 20-30 minutes.
