Yu choy is a Brassica green with the full cruciferous toolkit: glucosinolates that become sulforaphane and DIM for cancer protection and estrogen balance, dietary nitrate for nitric-oxide blood pressure lowering, vitamin K1 and calcium for bone and arterial health. Because the whole plant — tender stem, leaf, and flower bud — cooks in two to three minutes, it retains high vitamin C and folate, and the flower buds add concentrated glucosinolates much like broccoli florets.
Trim the very bottom of the stems; the rest is tender and eaten whole. Blanch or stir-fry 2-3 minutes only — yu choy is meant to stay crisp and bright green. Overcooking dulls and softens it.
