Why it is ours

Bambara groundnut was a dietary staple of the populations from whom most American descendants of slavery descend. Its replacement by peanuts and processed foods represents a nutritional downgrade — Bambara groundnut has higher protein quality and lower GI than peanuts.

What it does

Bambara groundnut is one of the few plant foods with a complete amino acid profile — PDCAAS comparable to soy and milk. Its starch is primarily resistant starch (50-55%) — passing to the colon to feed beneficial bacteria and produce butyrate. Multiple African research studies confirm blood glucose reduction in diabetic animal models. The combination of complete protein + resistant starch + low GI makes it metabolically ideal for T2D prevention.

How it is cooked

Soak overnight, boil 45-60 minutes until tender. Season with salt, pepper, and palm oil. Can be ground into flour for porridge. Available in African grocery stores (dried or canned).
