Why it is ours

A specialty mushroom reaching Black home cooks through farmers' markets and gourmet grocers, expanding the everyday mushroom repertoire beyond the white-button standard.

What it does

Blue foot mushrooms (cultivated Lepista nuda) contain beta-glucan polysaccharides and antioxidant compounds, with lab studies on the wild blewit noting antibacterial and antioxidant activity. They provide ergothioneine, B vitamins, and prebiotic fiber. Honest note: the wild wood blewit is a recognized edible but MUST be cooked, as it contains heat-sensitive compounds that cause GI upset raw; the cultivated blue foot shares this requirement. Health data is limited — best treated as a nutritious gourmet food.

How it is cooked

ALWAYS cook thoroughly — never eat raw. Saute in butter or oil until fully cooked; they hold their shape and firm texture well. The blue color fades with cooking. Pairs with cream, garlic, and herbs.
