What it does

Selenium is the cofactor for glutathione peroxidase — the body's most potent internal antioxidant system. Black Americans have elevated oxidative stress from weathering and chronic inflammation — selenium directly supports the body's primary antioxidant defense. Thyroid hormones require selenium for conversion from T4 to T3. Selenium deficiency is significantly associated with thyroid disease, which is underdiagnosed in Black women.

How it is cooked
