Breadfruit

Breadfruit is a starchy fruit with a bread-like texture when cooked. High in complex carbohydrates, fiber, potassium, vitamin C, and omega-3 fatty acids (unusual for a starchy food). The resistant starch content in unripe breadfruit is significant. Low glycemic index for a starchy food.

Why it is ours

Fresh at Caribbean grocery stores. Canned available online. Increasingly available at farmers markets in tropical and subtropical US climates (Hawaii, Florida, Southern California).

What it does

The omega-3 content is unusual for a starchy vegetable and clinically meaningful for the APEX population's cardiovascular needs. The resistant starch in unripe breadfruit functions identically to green plantain — prebiotic for gut health, lower glycemic impact. Potassium at the levels in breadfruit directly supports blood pressure reduction in the DASH protocol mechanism.

How it is cooked

Roasted: cut in half, brush with oil, roast at 400F until tender and caramelized. Boiled: peel, cube, boil 20-25 minutes until tender. Use as a potato substitute or in stews. Canned breadfruit available online and at Caribbean stores. Fresh available at Caribbean grocery stores.
