What it does

Isothiocyanates in moringa — particularly moringin and isothiocyanate-4 — activate Nrf2, the master regulator of antioxidant response. This is the same pathway that makes cruciferous vegetables protective against cancer and cardiovascular disease. The blood glucose-lowering effect is clinically documented — a meta-analysis of multiple randomized trials confirms significant A1C reduction. The iron content combined with the high vitamin C means moringa is self-potentiating as an anemia treatment — the C in the same leaf increases absorption of the iron in the same leaf.

How it is cooked

Fresh moringa leaves: strip from stems, add to soups in the last 2 minutes of cooking (heat destroys some nutrients). Moringa powder: 1 tsp added to smoothies, soups, eggs, or sauces. Available as fresh leaves at some African stores and as powder widely online and at health stores. The powder keeps up to 2 years stored properly.
