Why it is ours

The Gullah Geechee rice culture of the SC and GA Sea Islands is the direct inheritance of the Rice Coast (Senegambia, Sierra Leone) expertise that white planters specifically purchased and enslaved. Charleston Gold's revival is a reclamation of that authorship.

What it does

Charleston Gold is an aromatic long-grain with a lower glycemic load than refined white rice when eaten as whole or lightly milled brown. The aroma compound (2-acetyl-1-pyrroline) is the same that marks basmati and jasmine. As a whole grain it delivers magnesium — the mineral chronically depleted by cortisol-driven weathering in Black Americans and central to insulin sensitivity. Cooking then cooling rice raises resistant starch, blunting the glucose spike that matters in a community with 2x the diabetes rate. Naturally gluten-free.

How it is cooked

Rinse once to keep aroma; do not over-rinse. Cook 1 cup rice to 1.75 cups water, simmer covered 15-18 minutes, rest 10 minutes off heat. For lowest glycemic impact, cook and refrigerate overnight, then reheat. As 'brown' (unmilled) it needs 40-45 minutes and a 1:2.25 ratio.
