Why it is ours

The Santee and Cooper river systems were the engine of antebellum Carolina rice wealth, all of it built on the agricultural genius of enslaved Senegambians. Reviving the grain names the labor.

What it does

As a heritage long-grain, Santee Gold carries the same low-GI advantage as other Carolina-family rices when kept whole or lightly milled, and gains resistant starch on cooking and cooling. Whole-grain magnesium supports the insulin sensitivity and blood-pressure regulation most disrupted by chronic racial stress. Gluten-free.

How it is cooked

Cook 1:1.75 rice to water, covered, 15-18 minutes, rest. Brown (unmilled) form needs longer water and time. Cool-and-reheat method maximizes resistant starch.
